A soup and a pasta

Mondays can either go one of two ways.
Either I get home from work completely spent, uninspired, and want nothing more to collapse on the couch watching Project Runway.
Or I get home inspired, ready to clean the house, cook dinner, finish knitting projects that I was previously bored of, and take over the world.

Last night was the latter.
After an unenthusiastic day at work, I came home, did the grocery shopping, did a vague meal plan for the rest of the week, paid some bills, started the head of another minion, and cooked a two course meal. I even did the dishes afterwards (a rarity) so there isn’t washing up left over.

I borrowed a recipe from the blog of Food On Paper. It’s a delicious blog with food photography which I aspire to.
She posted this Mint, Pea, and Yoghurt soup a while back and I squirreled it away for a night like last night.

I was planning on trying to recreate the roasted lamb pasta which I had at the Royal not so long ago. So into the oven went a little lamb roast and some diced potatoes, carrots, and parsnip.

As I knew dinner was going to be late (roasting in the oven takes time) I thought I’d make a soup.
I’m always a bit ravenous when I get home and a quick soup seemed just the ticket.

The only variation was I didn’t have any mint! It’s a total disaster to not have an ingredient which is in the title, but it still worked. It would have worked better with some mint, but the only mint I had in the house was chocolate mint drinking powder. I decided against putting that in.

I served it up with the prescribed dollop of greek yoghurt which really made it something special. Accompanying it on the plate was some (store bought!) scones which had gone in the sandwich press to melt the parmesan cheese over the top.

To be honest that would have been enough. If I didn’t already have the roast in the oven I would have been quite content with just the soup and scone.

But the lamb was in the oven so once that was cooked it was rested until it was able to be sliced.
Into a hot pan went some garlic olive oil closely followed by some chopped onion. Then went the sliced lamb and the roasted vegetables.
On top of that went a bottle of passata, (I thought it was the closest match for what I had tasted at the royal), and then some water which rinsed out the jar.
That then came to the boil and then simmered until the pasta was cooked.

For the pasta, I used fresh lasagne sheets which I tore into rustic looking sheets.
I know why I don’t always use fresh pasta (it involves going to the shops more often) but oh how I love fresh pasta.
One of my dreams for when I have a bigger kitchen is a pasta maker.

Delicious! Even though he wasn’t hungry, Mr Sparklesness went back for seconds.
It’s a lamb roast, in a bowl, hugged by pasta.

thursday night tacos

This is becoming a thing.

This week is was Chicken tacos.
I put a little less effort into presentation, mostly because I was avoiding the washing up.
The chicken breast was diced and friend in a pan with some Old El Paso chicken seasoning stuff and some chopped onion. I added a little water when it started sticking to the bottom.

Next time I wouldn’t add so much of the seasoning.

But that’s the cooking done. Serve and Eat!

A spur of the moment soup

With the leftover tinned tomatoes from the Chicken Parma the other night, a soup was made.

I really hate throwing out food. I am so lucky and grateful to be able to live the style I do, I don’t want to waste the food that I’ve brought.

So into a pan went the tinned tomatoes, some beef stock, and some worcestershire sauce, salt & pepper (for good measure).
That boiled and then simmered for about 10 minutes.
It then became my lunch today.
Simple but I wish I had some cheese to top it off with.

With a spot of lunchtime reading, this Monday might just work out.

Chicken!

Monday. The start of the week.
I’m always a little bit more enthusiastic on a monday – well as ado an as i get home from work.
Mondays at work are never productive but Monday afternoons seem to be.

So full of gusto, I cleaned the bathroom, started cleaning the kitchen, and decided to tackle a nice veggie filled dinner.

The veggies were boiled.
The carrots went in first, then the cauliflower. The bok choy and snow peas went in at the very end just to blanch.

The chicken was grilled in a little bit of butter (mmm butter). Then once that was cooked some sauvignon blanc (I’m getting better with my wines) went in to deglaze the pan. After that had boiled off, some chicken stock and cream went in to make a sauce. Some fresh parsley and chives topped off the sauce and that was it.

And the best thing was, after eating it I don’t feel bloated and stuffed.
Great way to start the week.

i’m not sure much else could go wrong…

seriously… what is with tonight…
actually it all started with the first plumber on Saturday night who couldn’t do anything.
well that and the fact that i had to call a plumber because my bathroom was flooded.

and another plumber on Sunday who couldn’t do anything – so i spent two hours away from work (which today was glorified track-tagging and frickin boring as) this morning waiting for the plumbers to do whatever it is they needed to do, which apparently they did. But they didn’t turn my gas back on!!

So i got home from work late (because i’m making up the time i took off this morning), i’m tired (because the plumber didn’t show up last night until 10:00), and i’m feeling frustrated because…
i don’t have any gas, which is my hot water system, my oven, and stove top…
No hot water to mop my floor with (which looks like 3 plumbers have been trekking water through – and my brand new steam mop doesn’t work), no hot water for a shower (as i haven’t showered since the plumbing issues started on Saturday night – ickky!), and for some reason the bbq is covered in ants (which is not my domain – i’m pretty sure bug spray isn’t going to work and i have had enough!)

so the schnitzel went in the sandwich press.
which worked really well.
and it was delicious.
with a spinach, feta, and beetroot salad.

it hit the spot.

i still have no gas, am still stinky, and have covered part of the floor with a mat.
but i am well fed, some bad tv to watch, and some knitting to relax me.

and hopefully an early night…

it’s gone all wintery all of a sudden

wow … i dont know what’s happened to the weather but it doesn’t look pretty outside.
well it does look pretty but it’s not the 40+ degree weather that you expect in perth in summer.
it’s raining
which is great for the dams
and great for reading a good book (persuasion), watching some trashy telly (project runway), and pretending it’s cold enough to wear uggies.

so i put a chicken roast in the oven (chicken thigh with sundried tomatoes and cream cheese wrapped up, with roast tomatoes, pommes, and spinach and mushrooms sauteed in garlic butter = mmmmm!)
settled in with my new hoody, jeans, and my old favourite knee high uggies…
and listened to the rain and fireworks.
it was a good monday evening.

james mercer kind of monday

Im having a very james mercer kind of day.
I set up a playlist with all of my shins albums, flake music albums, and broken bells.
I’m hoping that it will calm me down as I’m having a doctor who ‘I have a face that no one listens to’, ‘first rule; don’t wander off – why does everyone wander off’, kinda day.
Why don’t people listen to me, I know I like the sound of my own voice but I don’t just say things for the sake of them. I particularly don’t like wasting time just because someone hasn’t followed a clear instruction. I prefer to waste my own time however I choose.
Anyways james mercer, he is a legend.
He can write songs so beautifully.
He’s almost distracting me from Monday and a dismal cricket test.
